Black Pepper

Berries are picked before reaching ripeness and left to dry until they become black and wrinkly. Since berries are underripe, the shell is not removed so that peppercorns can gain citrus, woody and floral aromas. Black pepper is the spiciest of all. It is usually added to marinade, sausages, stews and casseroles.
